GRILLED BRIE & PROSCIUTTO PANINI WITH FIG JAM & CARAMELIZED ONIONS

The creaminess of the Brie, the saltiness of the Prosciutto, and the sweetness of the caramelized onion and fig jam make a mouth-watering, grilled to perfection sandwich (panino)!




1 T extra-light olive oil
1 T unsalted butter
1 yellow onion, cut in half and thinly sliced
Pinch of granulated sugar
Crusty Italian bread or artisan bread, cut into 4 slices
Fig jam
Good quality brie
4 oz (126 g) Prosciutto di Parma, thinly sliced

In a skillet, heat oil and butter over medium heat.
Add the onion slices and cook, stirring often, until onions soften, about 10 minutes.
Add the sugar and let cook, stirring often, for another 10 to 15 minutes, until caramelized.
Turn off heat and set aside.

Heat a panini grill and spread a little olive oil on each slice of bread.
Spread a little fig jam on two slices of bread.
Add a couple of slices of Prosciutto to each.
Add some brie and top with the caramelized onions.
Add the other slice of bread and brush with olive oil.
Place on the hot panini grill or grill in a skillet until golden brown.

Makes 2 panini
