CREMINI MUSHROOM SALAD

If you love the woody flavor of cremini mushrooms, vinaigrette, and Pecorino Romano cheese, you will love this mushroom salad.


8 oz cremini mushrooms,
¼ cup extra-virgin olive oil
Zest and juice of ½ lemon
¼ t red pepper flakes
Sea salt and freshly ground black pepper
1 T Italian parsley, chopped
1 oz Pecorino Romano cheese, shaved

Wipe mushrooms clean. Trim the very ends off and thinly slice.
Place in a bowl and set aside.

In a small bowl, whisk together the olive oil, lemon zest, lemon juice, and red pepper flakes.
Season to taste with salt and pepper.

Place mushrooms on a large platter and drizzle dressing over.
Sprinkle with parsley and shaved Romano cheese.

Serves 4
